Crab Bisque Crab Bisque 1 lb Crab Meat 3 T Butter 14 C Shallots, chopped 2 cloves Garlic, minced 2 T Flour 2 C Chicken Stock 1 C Whipping cream 2 T Cognac 2 ea Green Onions, thinly sliced pinch of white pepper 1. Melt butter in a medium-sized saucepan over medium high heat, until it foams. 2. Add shallots, cover pan, reduce heat to low. Cook about 3 minutes. 3. Add garlic. Cook for about 2 minutes. 4. Add flour and stir. 5. Remove pan from heat. Stir in the chicken stock and the whipping cream slowly. 6. Return the pan to medium high heat. Stir until it boils. Cook for about 3 minutes. 7. Add crab, cognac, and white pepper. Bring to a boil. Cook 3 minutes.
Serve in warm bowls with sliced green onion as garnish. Serves: 4 Back to Articles |
