5 lbs King Salmon Fillet 14 lb. Butter, melted 5 cloves Garlic 14 C. finely chopped Parsley 2 Walla Walla Sweet Onions, sliced 2 Lemons, sliced 2 Oranges, sliced 1 C. Brown Sugar Seasoning salt Coarse black pepper
Sprinkle seasoning salt and coarse black pepper generously on the fillet and let sit for one hour. With the fillet, skin side down, on aluminum foil (edges turned up) place on BBQ over medium heat. Baste salmon with sautéed minced garlic and butter. Sprinkle with finely chopped parsley. Dust with a moderate coating of brown sugar. Place a layer of sliced Walla Walla onions on the fillet. And finally top with slices of lemon and orange.
Keep salmon covered with foil or BBQ hood and baste from drippings every five minutes. When finished (about 20 minutes) the salmon fillet should be moist and meat should flake apart easily. Serve straight from the BBQ, in 6 to 8 oz portions, and ENJOY!
