| Fresh Salmon Season is Ending! |

Time to fill your freezer!
Its that time! Fresh Salmon is on it's way to out. Sockeye will end in the coming days, while Coho and King are about two weeks away. Get them while you can.
I have a Food Saver, so bring me some vac pac bags and I'll portion, seal and freeze anything you might want. Just ask! Halibut is also about a month away too. |

| What's good Today?
People ask me all the time what we have during the Winter months. My response is always the same. I Love the Winter time. It's a little odd in that our sales really slow down, but the quality if what we have goes up.
Lets just analze the process real quick. Heat is not good for seafood. That said, the entire process is much colder. From when the fisherman harvests the seafood, to how he stores and transports it to wholsalers, then they deliver it to me at ideal temps. So there is much less chance of the products heating up, that means the bacterias that harm fish take a lot longer to start doing what they do. That means better quality for you. Better food = happy people. So dont forget about some of the great offerings for seafood during the winter. | | |

Well, first off my apologies for not doing these newsletters for a couple months. No reson is good enough for me, however some staffing issues and a really busy summer, made for some long hours and lack of energy at night. Its better than the alternative though. So thanks for a great Summer.
First I'll start with our most exciting news. Our Fish n Chips have been nominated for Evening Magazine's Best of Western Washington Contest. Nominated for the Great Meals catagory under Seafood. We lost to the likes of Ivars and Anthonys last year, so I want to beat the big boys this year, with your help we can do it. This link should get you to the voting, otherwise its on King5.com. Best of Western Washington It is also time for our Fall hours (see below). Pretty much the same, but without Sundays.
It's the time of year where we lose some great fresh offerings like Salmon and Halibut, but also the time when things like Crabs, Clams, Mussels and Oysters start to become really hardy and full of meat. Also winter fisheries provide great True Cod and bottom fish like Sole and Rockfish. Summer is great for everybody, but winter is when I see true seafood lovers. I cant resist the urge to suggest planning ahead for any party, Hoilday or special event. The products are available, but I am starting to watch our inventory much closer. I really want our quality to always be the best, so sometmes that means I might run out of things. The best way around that is a quick call, after that you can worry about all the other things life throws at us.
On a personal note, Hallie and I have adopted a 11 year old Shetland Sheepdog "Sheltie" named Dawson. He is sooo good and cute. We adopted him through Old Dog Haven. Which is also nominated in the Best of Western Washington Contest. What a really great organization, and these dogs have lots of life left in them, so dont't forget about the older buddies. Check them out.

| Look for a variety of new items on our shelves
More people are looking for something new to try on their seafood. I like to try and carry items that you may not be able to get in a regular grocery store. For example, I found a bunch of new stuff made by Old Bay. Like their Garlic and Herb seasoning and Old Bay Rub. If you like Tom Douglas Rubs, you might really like these. I think they're a little less potent though (which I like). I'm working on getting their breadings for some home fish frying. Try the tartar and cocktail sauce. Or just use the proven, regular Old Bay Seasoning.
These, along with many more items on our shelf, are sure to make any meal flavorful. Oh yeah the flavored butters in the freezer section are easy and delicious too.

Last newsletter we had a recipe contest. My apologies for the delay. But..... We have a winner for our BBQ Oyster battle!
Congratulations to Dax Dentler who shared with us his Sweet and HOT BBQ Oysters.
First, thanks to all that submitted recipes. It wasn't an easy decision, let me tell you. It was really interesting to see all the creative ideas and flavors, I WILL be trying pretty much all the recipes.
Side note: I never win anything. I guess you got to play to win. So this idea took an interesting twist. It was SO much fun to sort through and pick a winner, and especially call the person. Dax's reaction was awesome. Made me laugh all day, he sent in his buddy for the bounty of oysters and all was good. I felt like I won something too. PS: Dax, I've been giving out your recipe, so you for sure have had some bragging rights around here. Thanks Again!!
Sweet and HOT BBQ Oysters
5 Dozen Fresh Oysters
5 finely chopped Garlic cloves
1/4 C chopped Green Onion
1/4 C Red Onion
1 C Rice Wine Vinegar
2 T Sriracha hot chili sauce ( or your favorite)
Salt and Pepper
Combine all ingredients (except oysters) in medium bowl. Caramelizing the onions will add more sweet flavor, but not necessary. Add more hot sauce to really set it off.
Throw oysters on a hot grill, I recommend using charcoal, and wait for them to start opening. Once they do, crack off the top shell, and droop a spoonful of the sauce mix onto each halfshell oyster and serve them fresh of the grill to friends. Chase with a beer and good times.
This was a lot of fun, so we'll be doing this again soon. Dust of those killer recipes and look for the contest to appear again.
